As you probably already know, in order to get a complete form of protein without eating meat, you need a meal containing both grains and legumes (peas/beans). For this recipe, the trick is to add, in addition to powdered milk, peanut butter and farina to a can of fruit. Farina is a form of wheat, a type of grain. Peanuts are not nuts. They are actually a type of pea! Therefore, peanuts and peanut butter are legumes. Therefore, peanut butter and farina together gives you a complete form of protein.
Since ordinary bread contains almost 100% grains, this means that the peanut butter and jam sandwiches that my mother used to pack in my school lunchbox were actually very nutritious! It’s probably part of the reason why my health is so good even at the ripe old age of 68. (Knock on wood!)
The following recipe results in a fairly thick pudding-like consistency. If you want the preparation to be more like soup, then increase the amount of liquid and/or decrease the amounts of powdered milk/peanut butter/farina.
Makes 1 or 2 servings
1. Place a 6 cup (1½ quart) microwavable bowl on your large kitchen scale.
2. Zero the scale, and add the liquid portion of a can of fruit. (My favorite is fruit cocktail with heavy syrup.)
3. Add water or, better yet, fruit juice until the scale reads 8 ounces.
4. Mix in ⅓ cup of powdered milk.
5. Mix in a teaspoon of pumpkin pie spice* or apple pie spice*.
6. Mix in the fruit.
7. Zero the scale, and add 5 ounces of peanut butter by rubbing spoonfuls on the rim of the bowl. (A 10 ounce jar of peanut butter may be available at the Dollar Tree™ for only US$1.00.)
8. Microwave on high until the mixture comes to a vigorous boil.
9. Mix until all of the peanut butter is liquefied.
10. Slowly mix in 3 heaping tablespoons of instant farina.
* If you don’t have any pumpkin pie spice or apple pie spice, you can make your own pumpkin pie spice by mixing together the following 4 powdered spices: 4 parts cinnamon, 2 parts ginger, 1 part nutmeg, and 1 part allspice.
