I dedicate this recipe to my oldest son, Michael. We are both peanut butter lovers. He helped me to perfect the ratio of the ingredients, and today is his 35th birthday.
This dessert recipe, though very simple, quick and easy to prepare, is delicious. All that you need are 5 ingredients and 12 minutes!
Makes 4 to 6 servings
1. Add 3 teaspoons (1 tablespoon) of pumpkin pie spice* or apple pie spice* to a 6 cup (1½ quart) microwavable bowl.
2. Add ¼ cup of sugar. (If you don’t plan on serving it with any jam or whipped cream in steps 12 and 13, you might want to use ⅓ cup of sugar.)
3. Rock the bowl from side to side in order to distribute the sugar and spices somewhat evenly.
4. Put the bowl on your kitchen scale and zero the scale.
5. Add 10 ounces (by weight) of peanut butter.
6. Add 12 ounces (1½ cups) of milk.
7. Microwave on high for 3 minutes, and then microwave in 30 second intervals until the mixture comes to a vigorous boil.
8. Mix thoroughly.
9. Pour the mixture into a store bought graham cracker pie crust.
10. Cover with a large inverted plate or an inverted pie baking container and allow to cool.
11. Covered with plastic wrap and keep in the freezer for several hours.
12. Just before serving, spread a thick layer of strawberry jam on top. (optional)
13. Serve with whipped cream as a condiment. (optional)
* If you don’t have any pumpkin pie or apple pie spice, you can make your own pumpkin pie spice: 4 parts ground cinnamon, 2 parts powdered ginger, 1 part allspice, and 1 part ground nutmeg.
