Recipe: Green Beans and Cheese

This recipe, though very simple, quick and easy to prepare, is incredibly delicious. If you have a can of green beans and some American style cheese handy then you’re good to go!

(Makes 1 to 3 servings)

1. Add ½ teaspoon of salt to a 6 or 7 cup clear glass microwavable bowl.

2. Add ½ teaspoon of powdered basil. (optional)

3. Add ½ teaspoon of powdered ginger. (optional)

4. Add ¼ teaspoon of asafeotida (available from East Indian grocery stores). (optional)

5. Add 2 teaspoons of curry powder.¹

6. Rock the bowl from side to side in order to distribute the salt and spices somewhat evenly.

7. Using your fingers, break off small pieces from a solid block of American style cheese, such as Kraft™ Velveeta, placing them into a measuring cup until the 1 cup mark is reached. (You can also do it by weight: 4 ounces of cheese.)

8. Add the cheese to the microwavable bowl.

9. Partially open a 15 ounce can of green beans,² and pour the liquid portion into the measuring cup. (Not into the microwavable bowl unless you are measuring by weight!)

10. Add milk, evaporated milk, tomato juice or water to the measuring cup until the total amount of liquid is 1 cup (8 ounces).

11. Add the liquid to the microwavable bowl.

12. Microwave on high for 3 minutes.

13. Add ¾ cup of instant oatmeal.³

14. Open the can of green beans the rest of the way, and cover the instant oatmeal with them.

15. Mix thoroughly, scraping the bottom so that all of the spices are mixed in.

16. Microwave on high for 1 minute.

17. Mix.

18. Serve while still warm.

¹ If you don’t have any curry powder, then you can make your own: 3 parts ground coriander, 1 part ground red chili beans, 1 part ground cumin, 1 part ground fenugreek and 1 part ground turmeric.

² A 15 ounce can of almost any type of vegetable could be substituted for the can of green beans.

³ Instead of ¾ of a cup of instant oatmeal, ⅔ of a cup of instant mashed potato flakes or ¾ of a cup of “Gerber™ Rice Cereal for Baby” could be substituted. The instant mashed potato flakes will cause the preparation to be like spicy mashed potatoes with green beans mixed in. The rice cereal will cause the preparation to be deliciously creamy, but no one except the cook will know for sure what’s making it creamy! One of my favorites is a can of sliced potatoes and rice cereal baby food. Another is a can of sliced carrots and instant mashed potato flakes.
