Recipe: Wintertime Snack That’s a Complete Meal

Here’s a delicious treat which may be prepared in less than 5 minutes, and which is very good for breakfast or as a snack on a cold winter’s day.

Don’t worry about preparing too much. It tastes even better after it’s been “sitting around for awhile.” I store it on top of the pilot light on my gas stove so that it stays warm.

(2 to 4 servings)

1. Melt ¼ cup (½ stick) of butter¹.

(Do steps 2 through 6 while the butter is melting)

2. Line the bottom of a 1 quart microwavable bowl with puffed rice (This is a good way to soak up the extra melted butter which will be added later)

3. Fill the bowl ½ full with Swad Chevdo² (A spicy, crunchy mixture of mostly rice & beans that’s ½ protein).

4. Add a handful of mixed nuts. (I like the Walmart brand of mixed nuts because they include macadamia nuts which are fun to “fish out” and eat individually!)

5. Add ½ handful of golden raisins.

6. Add ½ handful of chopped dates.

7. Pour the melted (or partly melted) butter over the mixture.

8. Add a “glug” of olive oil. (optional)

9. Microwave for 30 seconds.

10. Add a large serving spoonful of Delicious, Nutritious Tomato Sauce for Pasta, Salad or Pizza. (optional)

11. Mix thoroughly.

Suggestion: Include a banana with each serving.
