Recipe: Peanut Butter Fudge

I’m not a fan of either the taste nor the smell of molasses, but still, this recipe is pretty darn good. All that you need are 4 ingredients and 5 minutes!

(Makes 1 to 2 servings)

1. Weigh a 2 cup microwavable bowl.

2. Add 1½ ounces (by weight) of molasses to the bowl.¹

3. Using your fingers, break off small pieces from a solid block of American style cheese, such as Kraft™ Velveeta, and add them to the bowl until 2½ ounces (by weight) have been added.

4. Add 4 ounces (by weight) of peanut butter.

5. Now the bowl should be 8 ounces heavier than it was when it was empty.

6. Add 1 teaspoon of pumpkin pie spice or apple pie spice.²

7. Microwave on high until the mixture comes to a boil. (Microwave for 30 seconds. Then microwave for another 30 seconds while watching very carefully lest it boil over.)

8. Mix quickly, because, as it cools, it will become very thick.

¹ Although I haven’t tried it, you should be able to substitute corn syrup or a sugar/water solution for the molasses.

² If you don't have any pumpkin pie spice, you can make your own: 4 parts ground cinnamon, 2 parts ground ginger, 1 part ground nutmeg, and 1 part ground allspice.
