Recipe: Complete Baked Potatoes Meal for Those with No Time

Any of the following true of you?

1. No time to cook.

2. No time to wash dishes.

3. No time to eat in restaurants.

4. No time for grocery shopping.

5. No time to eat more than once or twice a day.

If so, then this recipe may be for you!

This recipe uses two microwavable, disposable paper bowls¹, four rubber bands, and one or two plastic spoons¹ as the only cooking / eating utensils. It does not require any perishable ingredients such as fresh vegetables or dairy products (Butter will keep for months in the freezer!), so you only need to stock up on groceries once every few weeks! It is a complete meal in itself with plenty of protein. It is so amazingly filling that you won’t need another meal for at least 12 hours!

Using two paper bowls¹ and four rubber bands, you can make a disposable “pressure cooker” for your microwave. The purpose of a pressure cooker is to speed up cooking time, save energy, and so the ingredients don’t dry out.

1. Add enough water to cover the bottom of a 20 oz. microwavable, disposable paper bowl¹.

2. Add approximately 14 ounces of scrubbed baking potatoes or sweet potatoes (Enough to fill the bowl ½ full after they are “mashed.” The potatoes should be as close to the same size as possible. Otherwise, the smaller potatoes will tend to become overcooked, and the larger ones undercooked.)

3. Place a second 20 oz. disposable paper bowl upside down on top of the first.

4. Secure the two bowls together using four equally spaced rubber bands.

5. Microwave the potatoes on high for 6 minutes. (I do not use the “Potato” button because the pressure cooker fools the sensor and causes the potatoes to be undercooked.)

6. While the potatoes are baking, melt between 2 and 4 tablespoons (between ¼ and ½ of a stick) of butter³.

7. After removing the assembly from the microwave, remove the rubber bands and save them for next time.

8. Save the top paper bowl for use as the bottom paper bowl next time.

9. Stab each potato with a plastic spoon¹ to make sure that they are soft all the way to the center. If not, repeat steps 3, 4, 5, 7, and 8 with a microwave time of 3 minutes instead of 6 minutes.

10. Discard any extra water left in the bowl. (If there is no extra water, try adding a little more water next time.)

11. Using the plastic spoon, break the potatoes up into small pieces. (In order to prevent the plastic spoon from melting, break up the potatoes with a quick, stabbing motion.)

12. Add a liberal amount of salt.

13. Add some black pepper and/or curry powder.

14. Fill the remainder of the bowl with Swad Chevdo².

15. Add the melted butter.

16. Microwave for 30 seconds.

17. No need to mix. (Mix while eating.)

18. Serve while still warm with approximately 10 oz. of sour cream as a condiment.

¹ At Walmart™, I’ve purchased Dixie™ brand 20 oz. microwavable paper bowls in packages of 30 for US$2.97 and Diamond™ brand plastic spoons in packages of 48 for US$.96.

² Swad Chevdo is a spicy, crunchy mixture of mostly rice & beans that’s ½ protein. It also contains turmeric and chili powder which are both purported to have outstanding health benefits. Swad Chevdo is available from East Indian grocery stores. Call 800-800-SWAD or go to www.rajafoods.com to locate a dealer in your area.

³ For a good way to melt the butter while baking the potatoes, see “The World’s Best Popcorn”

(http://llbest.com/?P=6c). If you only have one microwave oven, then the butter could be melted during step 11.
